This week I cooked 2 slabs of St Louis Cut ribs, but since I trimmed them myself I had the rib tips left over. So I shot a quick video for how to smoke rib tips..
For smoking rib tips, I start by cutting the rib tips into 2-3 inch pieces. Then I season them with Killer Hogs AP Rub and Killer Hogs The BBQ Rub, but you can use any BBQ Rub or combination you like here..
I fire up my smoker to 250 with some light wood smoke. You can use any grill or smoker for this, you just want to hold the temps steady at 250 through this entire cook..
For the first part of this cook, I smoke the rib tips for 3-4 hours. You want the rib tips to start getting tender and have a nice color on the outside..
Then I toss the rib tips in sauce and place them back on the smoker for another hour to finish cooking and let the sauce carmelize..
You’ll know the rib tips are done when they are tender and the sauce is baked on. Then you just serve with a little sauce on the side and enjoy!.

In this episode I show you how to smoke rib tips! I smoke them the same way I smoke spare ribs: 250*F for 5 to 6 hours. For flavor I used my BBQ dry rub and my homemade Sweet & Spicy BBQ sauce to glaze them the last 5 minutes..
I used 100% hardwood lump charcoal with apple and cherry wood chunks for smoke..

How to make BBQ pork spare ribs on the grill.
Remove membrane from pork ribs (as shown in video).
Rinse ribs.
Coat with 1/4 cup of olive oil.
Rub a dry rib rub onto oiled down ribs.
(I used a Memphis rib rub).
1/2 Cup of BROWN SUGAR, 1/4 Cup Of PAPRIKA, 1 TBS OF SALT, PEPPER, GARLIC POWDER, ONION POWDER, GROUND CUMIN, DRY MUSTARD, OREGANO AND 1 TSP OF CAYENNE PEPPER..
Combine and rub onto ribs..
Let ribs marinate overnight, minimum 5 hours.
Wrap in an aluminum foil and bake on grill until tender..
Add BBQ sauce and grill for another 15 mins.

Whole Spares or “Belly Ribs” are the lower portion of a hog’s rib cage. They’re typically 12-13 bones long and still have the breast plate attached (once removed, you have St. Louis cut ribs)..
For this recipe I’m using spares and you can find Whole Spares at just about any grocery store..
Once you get them home, remove the membrane from the bone side of the ribs. Sometimes whole spares will have the inner skirt or flap meat still attached. It turns into pretty good bark on the under-side of the ribs once cooked, but you can trim it off if you desire..
The seasoning is kept to a minimum on these ribs. You need Kosher Salt and a little BBQ Rub for color and that’s it. The pit and the wood do all of the magic, and Pork flavor is the star of the show..
Now it’s time to fire up the smoker. The temp needs to be in the 250⁰ range with a few chunks of dry Hickory wood to the fire for smoke..
Place each slab on the smoker and let the temp creep up to 250⁰. At this point all you have to do is hold it steady. It’ll take in the neighborhood of 4-5 hours for these ribs to get there..
Check on them at the half way mark (2.5 hrs) but don’t leave the door open too long. These ribs are done when a good bark has formed on the outside and the meat pulls back from the bones..
I use the bend test. Lift up on the outer edge as if you were folding the rib. It should flex and start to break on top; this is a sure fire way to know that they’re tender..
Remove the ribs from the smoker and give them a few minutes to cool down before serving. A good knife will slice through the entire slab and you can serve them in individual bone pieces..
I do like to add a little extra dry rub to the top and keep the sauce on the side for dipping for these smoked spare ribs..

Position your pork brisket on the grill and close the lid. Cook the brisket for about 2 hours or until the internal temperature of the meat reaches at least 145 degrees Fahrenheit in the thickest portion of the meat.Use a food-grade sauce mop to coat the surface of the pork spare rib brisket with barbecue sauce once the surface of the ribs begins to slightly brown and crust over. Cook for about 5 minutes, and then flip the ribs. Coat the other side of the pork spare rib brisket.
A full rack of pork spare ribs (shown below) incorporates a tempered meaty part called a flap and an elongated meaty section that runs across the length of the rack and is commonly called the brisket bone or the rib tips (it contains the tips of the ribs.Ribs, on the other hand, demand to be devoured caveman-style, ripped apart with bare hands and gnawed right off the bone. I won’t say that cooking them is quick — if you want speed, grill a steak.Prepare Charcoal Smoker or other grill for indirect cooking at 250⁰ add Hickory Wood chunks to hot coals for smoke flavor. Remove sinew membrane from bone side of each slab of pork ribs.
Season each slab with Kosher Salt and bbq rub. Place.Mix the brown sugar, fajita seasoning, and paprika in a bowl.
Rub both sides of the pork spareribs with the brown sugar mixture. Place the spareribs in a 9×13-inch baking pan; cover and refrigerate overnight.This is a multiple prize-winning master recipe.
It has several steps that can be used on pork spareribs, country-style ribs, or pretty much any other type of pork rib; simply adjust oven time up for meatier cuts. Use some soaked wood chips on the barbecue. The smokier the grill, the better the ribs will taste!For an extra-crisp finish, place the brisket on a hotel pan and cook it under the broiler for about 30 seconds to a minute.
Slice leftover pork to make delicious and hearty cold cuts, ideal for barbecue-style pork brisket sandwiches.Lay the ribs meat side down in the brown sugar mixture. Sprinkle the bone side of the ribs with the brown sugar, honey and butter. Repeat with the second set of ribs.
Tightly crimp the foil and return to the grill, meat side down, for 2 hours.Pork Spareribs Brisket Bone Off fter all was said and done, I am no longer going to cook my ribs any other way than the 3-2-1 method and if there is anyone reading this wondering if it makes a difference, let me and my wife tell you, it absolutely does. Best ribs I have ever made.Slice in between the bones to cut the racks into individual ribs.
Place the ribs on a rimmed half sheet pan, and pour 2/3 of the barbecue sauce on top (which should be about 1 cup of sauce). Toss the ribs well, until evenly coated with the sauce. Cover the ribs very.
You must use low heat and long cooking times to fully cook a large, thick cut like pork brisket. Set up your grill for indirect heat to prevent burning the brisket. Do this by heating one side of the grill and cooking the pork on the other side.
Wrap the pork in foil to prevent burning and keep the meat from drying out.Set the gas grill to medium-low heat. Turn one gas burner off in order to cook the spare ribs under indirect heat.Every bite of this will send you to pork ribs heaven.
This perfectly tender pork will spark up your tastebuds. The extremely rich, flavorful sauce is garlicky, sweet, and spicy. It’s the perfect sauce to braise with spareribs.Go as spicy as you want! Add more Sriracha or labuyo if you need more heat.
Pork come in many styles, including baby back ribs, country-style ribs which are not actually ribs at all but come from the shoulder area spare ribs, and St. Louis-style ribs, which are also known in some areas of the country as pork spare rib brisket”.
