  • Glutinous rice flour: 1/2 cup

This is the rice flour prepared from short grained rice. It is slightly sticky. It thickens the texture of kimchi. It also binds other ingredients together. If you cannot find it as a substitute use potato starch or tapioca flour.

  • Water: 1/2 cup

Water helps to hydrate the ingredients and create a brine for the kimchi. It also helps to dissolve the sugar and salt.

  • Sugar: 1/4 cup

Use granular sugar for Pa kimchi. Syrup would make it too sweet. It would balance the flavor of red pepper flakes. It would also help in fermentation.

  • Salt: 1 tbsp

Table salt would be too salty for kimchi. I use fine sea salt or kosher salt. It preserves the kimchi and also draws out moisture from green onions.

  • Minced garlic: 1 tbsp

Garlic is known for immune boosting properties. It balances the flavors of kimchi. You can use garlic powder instead of minced garlic as a substitute.

  • Minced ginger: 1 tbsp

Minced ginger is famous for its anti inflammatory properties. It gives a complex flavor to the Pa kimchi. Replace it with equal amount of garlic powder as a substitute.

How to Make Green Onion Kimchi (Pa kimchi)?

  • Chop the green onions into 1-inch pieces with a knife.
  • In a large bowl, combine the Korean red pepper flakes, glutinous rice flour, water, sugar, salt, minced garlic, and minced ginger. Stir it thoroughly until mixture combines. There should not be any lumps in the mixture.
